Ingredients
π 1.5 lbs diced chicken breast
π₯¦ 1 bag broccoli florets, about 10 oz, fresh or frozen
πΎ 2 bags Birds Eye Riced Cauliflower, Roasted Garlic flavored, 10 oz each
π§ Several tablespoons Coconut Aminos
π― Several tablespoons Sugar-Free Honey
π Zest from 1 orange
πΏ 1 small piece of fresh ginger, grated
π§ 1-2 teaspoons jarred minced garlic
πΆοΈ 1/2 - 1 teaspoon No. 94 Red Pepper Flakes
π₯ Several tablespoons avocado oil
π Chopped scallions for garnish
βͺ Sesame seeds for garnish
Instructions
1- Cauliflower Rice Preparation:
- Microwave the 2 bags of Birds Eye Riced Cauliflower according to package instructions.
- Carefully transfer the hot riced cauliflower into a kitchen towel.
- Squeeze out all excess water from the riced cauliflower to ensure fluffiness.
- Heat a little avocado oil in a non-stick pan over medium heat.
- Add the cauliflower to the hot pan and stir-fry for about 2-3 minutes until any remaining moisture evaporates.
2- Broccoli Preparation:
- Add broccoli florets to a saucepan with a splash of water.
- Cover and steam on the stovetop until they are tender-crisp and bright green.
3- Chicken Marinade:
- Dice the chicken breast into bite-sized pieces and place in a Ziploc bag.
- Add Coconut Aminos, Sugar-Free Honey, orange zest, grated ginger, minced garlic, and chili flakes.
- Seal the bag and massage so the chicken is well-coated with the marinade.
- Let marinate for at least 10 minutes (overnight for deeper flavor).
4- Cooking the Orange Chicken:
- Heat avocado oil in a separate non-stick pan over medium-high heat.
- Add the marinated chicken, cooking until the chicken is golden brown and the sauce has thickened, about 8-10 minutes.
5- Meal Prep Assembly:
- Divide the cauliflower rice into two compartments of each meal prep container.
- Place steamed broccoli in one compartment of each container.
- Add the cooked orange chicken to the remaining compartment.
- Garnish with chopped scallions and sesame seeds.
