Instructions

1- Cauliflower Rice Preparation:

  • Microwave the 2 bags of Birds Eye Riced Cauliflower according to package instructions.
  • Carefully transfer the hot riced cauliflower into a kitchen towel.
  • Squeeze out all excess water from the riced cauliflower to ensure fluffiness.
  • Heat a little avocado oil in a non-stick pan over medium heat.
  • Add the cauliflower to the hot pan and stir-fry for about 2-3 minutes until any remaining moisture evaporates.

2- Broccoli Preparation:

  • Add broccoli florets to a saucepan with a splash of water.
  • Cover and steam on the stovetop until they are tender-crisp and bright green.

3- Chicken Marinade:

  • Dice the chicken breast into bite-sized pieces and place in a Ziploc bag.
  • Add Coconut Aminos, Sugar-Free Honey, orange zest, grated ginger, minced garlic, and chili flakes.
  • Seal the bag and massage so the chicken is well-coated with the marinade.
  • Let marinate for at least 10 minutes (overnight for deeper flavor).

4- Cooking the Orange Chicken:

  • Heat avocado oil in a separate non-stick pan over medium-high heat.
  • Add the marinated chicken, cooking until the chicken is golden brown and the sauce has thickened, about 8-10 minutes.
