Crispy Arayes with Tangy Tahini-Yogurt Sauce

Ingredients
For the Arayes:
π₯ 4 small pitas, cut in half

1 yellow onion, grated & squeezed dry
π§ 7 garlic cloves, minced

2 tbsp tomato paste
πΏ 1/3 cup fresh parsley, chopped
πΏ 1/3 cup fresh cilantro, chopped, optional but excellent
π« 1 tbsp olive oil
π₯© 1 lb lean ground beef
π§ 1 tsp salt
β« 1 tsp black pepper
π° 1 tsp cinnamon
πΏ 2 tsp cumin
πΆοΈ 2 tsp paprika
π° 1 tsp allspice
For the Garlic Tahini Sauce:
π₯ 1/2 cup Greek yogurt
π° 3 tbsp tahini
π 1/2 lemon, juiced
π§ 2 garlic cloves, minced
π« 2 tbsp olive oil
πΏ 1/4 cup fresh parsley, chopped
πΏ 1/4 cup fresh cilantro, chopped
πΏ 1 tsp cumin
π§ 1 tsp salt
β« 1 tsp black pepper
πΆοΈ 1 tsp paprika
Instructions
1- Preheat your oven:
- Preheat the oven to 350Β°F (175Β°C).
- Prepare the onion by grating it and squeezing out all the liquid using a paper towel or cheesecloth.
2- Mix the Filling:
- In a large bowl, combine the lean ground beef, tomato paste, minced garlic, all spices, parsley, cilantro, and the grated onion.
- Mix thoroughly with your hands for about 2 minutes until well combined.
3- Prepare the Pitas:
- Cut each pita in half.
- If they donβt have a pocket, gently use a knife to create one. Stuff them generously with the beef mixture, ensuring the pita is full but not tearing.
4- Pan-fry the Arayes:
- Lightly brush the outside of each stuffed pita with olive oil.
- Heat a HexClad non-stick frying pan over medium heat. Place each araye meat-side down and sear for 1β2 minutes until a crust forms. Then, sear the pita sides until golden and crispy.
5- Finish in the Oven:
- Transfer the seared arayes to a baking tray.
- Bake for 10β15 minutes until fully cooked through.
6- Make the Sauce:
- While the arayes bake, whisk together all ingredients for the garlic tahini sauce in a bowl.
- Adjust lemon, salt, or garlic levels to taste.
7- Serve:
- Once out of the oven, optionally brush the arayes with melted garlic herb butter for extra flavor.
- Serve hot with the tangy tahini-yogurt sauce. Enjoy!
