Instructions

1- Prepare Cauliflower Rice:

  • Break the cauliflower into florets.
  • Using a Ninja Professional Blender, pulse the cauliflower until it resembles rice grains.
  • Alternatively, grate the cauliflower using a cheese grater for a finer consistency. Set aside in a bowl.

2- Season Raw Shrimp:

  • Pat the shrimps dry with paper towels.
  • Coat them with garlic powder, salt, black pepper, and corn starch. Set aside to marinate briefly.

3- Cook Raw Shrimp and Sliced Garlic:

  • Heat a copper-colored non-stick pan with 1 tablespoon of oil.
  • Add sliced garlic and the seasoned shrimp. Cook until shrimp turn pink (about 1 minute per side). Remove and set aside.

4- Make Sambal Paste:

  • In a stone mortar and pestle, grind habaneros, jalapeño, minced garlic, curry powder, and fish sauce until a smooth paste forms. Set aside.

5- Cook Cocktail Shrimp and Eggs:

  • Heat a large wok with 1 tablespoon of oil.
  • Add minced garlic and cocktail shrimp, seasoning with salt and pepper.

  • Add cooked shrimp, scrambled eggs, green onions, carrots, and bell pepper. Stir-fry until vegetables are tender yet firm.

  • Toss in cauliflower rice, stir-frying for 1-2 minutes. Avoid overcooking to keep the rice-like texture.

7- Portion and Serve:
