🥕 2 tablespoons carrots, chopped, fresh

🍤 1/2 cup approx. 3 oz cocktail shrimps, cooked, small
🧄 1 tablespoon garlic, minced, fresh
🥚 2 large eggs, fresh
🥣 1 tablespoon Sempio Organic Soy Sauce 샘표 유기농 자연연두간장
🧂 To taste Guérandaise Gros Sel Séché sea salt grinder
🌶️ To taste black peppercorns (brand not specified)
🫒 2 tablespoons California Olive Ranch 100% California Extra Virgin Olive Oil
🍤 1 lb approx. 8 oz raw shrimps, fresh, shells on (optional)
🧄 1 tablespoon Sprouts Organic Garlic Powder

🌶️ 2 habaneros, chopped, fresh (for sambal)

🌶️ 1 tablespoon curry powder (for sambal)
🌶️ 1 tablespoon bell pepper, chopped yellow and red shown, fresh
🥦 Garnish with fresh broccoli florets
🥚 Garnish with hard-boiled eggs
Instructions
1- Prepare Cauliflower Rice:
- Break the cauliflower into florets.
- Using a Ninja Professional Blender, pulse the cauliflower until it resembles rice grains.
- Alternatively, grate the cauliflower using a cheese grater for a finer consistency. Set aside in a bowl.
2- Season Raw Shrimp:
- Pat the shrimps dry with paper towels.
- Coat them with garlic powder, salt, black pepper, and corn starch. Set aside to marinate briefly.
3- Cook Raw Shrimp and Sliced Garlic:
- Heat a copper-colored non-stick pan with 1 tablespoon of oil.
- Add sliced garlic and the seasoned shrimp. Cook until shrimp turn pink (about 1 minute per side). Remove and set aside.
4- Make Sambal Paste:
- In a stone mortar and pestle, grind habaneros, jalapeño, minced garlic, curry powder, and fish sauce until a smooth paste forms. Set aside.
5- Cook Cocktail Shrimp and Eggs:
- Heat a large wok with 1 tablespoon of oil.
- Add minced garlic and cocktail shrimp, seasoning with salt and pepper.
- Crack eggs directly into the wok, scrambling until cooked. Remove from wok and set aside.
6- Stir-fry Cauliflower Fried Rice:
- Heat the wok again with a tablespoon of oil.
- Stir in a spoonful of sambal paste, cooking briefly.
- Add cooked shrimp, scrambled eggs, green onions, carrots, and bell pepper. Stir-fry until vegetables are tender yet firm.
- Add soy sauce and stir everything until well mixed.
- Toss in cauliflower rice, stir-frying for 1-2 minutes. Avoid overcooking to keep the rice-like texture.
7- Portion and Serve:
- Serve in stainless steel bento boxes for meal prep or on plates.
- Top with cooked shrimp and sliced garlic.
- Garnish with chopped green onions, broccoli florets, and half a hard-boiled egg.
