Prepared with tender chicken thighs and savory hard-boiled eggs, this dish celebrates the rich, umami flavors that make Vietnamese cuisine so beloved. Ingredients
🍗 500 grams boneless skinless chicken thighs, cut into chunks
🥚 4 whole eggs
🥑 2 teaspoons avocado oil
🧅 30 grams shallot, minced
🧄 2 cloves garlic, minced
🐟 2 tablespoons Red Boat Fish Sauce (30ml)
🌿 2 teaspoons soy sauce
🍬 2 teaspoons monkfruit sweetener (or sugar)
🥣 ½ cup chicken bone broth (120ml)
💧 1 cup water (240ml)
🌶️ 1 teaspoon black pepper
🌶️ Optional: sliced chili, green onion for garnish
Instructions
1- Cook the Eggs:
- Place 4 eggs in a Dash egg cooker.
- Add the required water using a measuring cup and cover.
- Start the cooker to hard-boil the eggs.
2- Caramelize the Sugar:
- Heat a HexClad saucepan on a gas stove over medium heat.
- Add a small amount of oil and stir in 1 tablespoon of sugar continuously until it melts into a dark amber caramel.
3- Sauté Shallots and Garlic:
- Add the minced shallots and garlic to the caramel.
- Sauté until the shallots are fragrant and slightly softened.
4- Brown the Chicken:
- Add the chicken thigh pieces to the pan.
- Brown the chicken slightly for a couple of minutes on each side.
5- Add Liquids:
- Pour in 2 tablespoons of Red Boat Fish Sauce, soy sauce, ½ cup bone broth, and 1 cup of water.
- Stir well to combine all the ingredients.
6- Simmer:
- Cover the saucepan with a lid and bring to a gentle simmer.
7- Prepare the Eggs:
- Once the eggs are cooked, remove them from the egg cooker and peel them.
8- Simmer with Eggs:
- Add the peeled hard-boiled eggs to the simmering chicken and sauce.
- Continue to simmer, stirring occasionally, allowing the chicken to cook thoroughly and the eggs to absorb the sauce's flavors.
- Let the sauce reduce and thicken to your desired consistency.
9- Serve:
- Once ready, remove from heat and serve the Gà Kho in a bowl.
- Garnish with black pepper and optional sliced chili or green onion.
