Instructions

1- Microwave Raspberries:

  • Place the frozen raspberries in a microwave-safe bowl (white).
  • Microwave for 1 minute.

2- Mash and Mix:

  • Mash the warmed raspberries with a fork (silver).
  • Stir in the rice malt syrup and vanilla extract until fully combined.

3- Combine Dry Ingredients:

  • Integrate desiccated coconut, rolled oats, and vanilla protein powder with the raspberry mixture.
  • Use a spoon (silver) until well combined.

4- Shape and Chill:

  • Roll the mixture into 14 balls.
  • Line them on a wooden tray with baking paper and freeze for at least 1 hour.

5- Prepare Chocolate Topping:

  • Melt vegan dark chocolate and coconut oil together in a deep Pyrex glass measuring cup.
  • Microwave in 20-second increments, stirring after each, until smooth.

6- Coat and Set:
