Ingredients
🌶️ 3 jalapeños
🧄 2 garlic cloves
🧅 ¼ onion
🍅 6 tomatillos
🌿 Small bunch of fresh cilantro plus extra for garnish
🧂 1 teaspoon salt
🫒 2 tablespoons oil
🌮 8 corn tortillas
🍗 2 cups shredded cooked chicken
🧀 ½ cup cottage cheese
🧀 1 ½ cups shredded Oaxaca cheese
🥛 Approximately 1-2 tablespoons creamy ingredient such as cottage cheese or sour cream
Instructions
1- Prepare the Salsa Verde:
- In a pot, bring the jalapeños, garlic cloves, ¼ onion, and tomatillos to a boil. Cook until the tomatillos are soft. Drain and let cool slightly.
2- Blend the Salsa:
- Transfer the boiled vegetables into a Vitamix blender. Add the fresh cilantro and salt. Blend into a vibrant salsa verde, adding about 1-2 tablespoons of sour cream or cottage cheese for a creamy consistency.
3- Prepare the Tortillas:
- Heat oil in a non-stick griddle or skillet over medium heat. Fry each corn tortilla briefly on both sides until soft. Place them on a plate, ready to fill.
4- Make the Filling:
- In a mixing bowl, combine the shredded chicken, cottage cheese, and 1 cup of shredded Oaxaca cheese. Mix well.
5- Assemble the Enchiladas:
- Fill each fried tortilla with the chicken and cheese mixture. Roll them up tightly and position them seam-side down in a white rectangular ceramic oven-safe dish.
6- Add Toppings:
- Pour the salsa verde over the filled tortillas, ensuring even coverage. Sprinkle generously with additional cottage cheese and shredded Oaxaca cheese.
7- Broil:
- Place the dish in a standard built-in kitchen oven under the broiler. Broil until the cheese is bubbly and golden.
8- Serve:
