Ingredients
🍗 3 pieces skinless, boneless chicken breasts

🧀 150g grated mozzarella cheese, plus an additional 50-100g for topping
🌿 1 handful fresh cilantro or parsley, finely chopped
🧄 3 cloves garlic, minced
🫒 A drizzle of cooking oil
Instructions
1- Prepare the Chicken:
- Place the chicken breasts on a wooden cutting board.
- Use a kitchen mallet to flatten and tenderize the chicken breasts until thin and even.
2- Season and Mix:
- Season both sides of the chicken with salt and black pepper.
- In a small glass bowl, mix together the mayonnaise and mustard using a metal spoon.
- In a large glass bowl, combine the 150g of grated mozzarella, minced garlic, and chopped herbs. Mix well with a metal fork.
3- Assemble the Rolls:
- Brush the seasoned chicken with the mayonnaise-mustard mixture.
- Spoon the cheese-herb-garlic mixture onto the mayo-coated side of each chicken breast.
- Carefully roll each chicken breast to enclose the filling.
4- Cook the Chicken:
- Heat a drizzle of cooking oil in a non-stick frying pan over low heat.
- Place the chicken rolls in the pan and brush with any remaining mayonnaise-mustard mixture.
- Cover with a glass lid and cook on low heat for 35 minutes.
5- Final Touches:
- After cooking, remove the lid and generously sprinkle additional grated mozzarella over the chicken rolls.
- Cover again briefly until the cheese melts into a golden topping.
