Ingredients
🥬 1-2 large leaves Lettuce per roll
🥕 3 Carrots julienned
🥒 1 English Cucumber julienned
🥬 1/2 small Red Cabbage shredded
🦀 20 oz Imitation Crab chopped or shredded
🌿 Approximately 1/4 cup Fresh Cilantro
🍶 1 cup Kewpie Mayonnaise
🌶️ 3 tablespoons Huy Fong Foods Sriracha
🍶 1 tablespoon Rice Vinegar
🍋 Juice of 1/2 a Lime
🧂 1/4 teaspoon Salt
⚫ 1/4 teaspoon Black Pepper
🍚 6 large Rice Papers
Instructions
1- Vegetable Preparation:
- Julienne the carrots and English cucumber into thin matchsticks.
- Shred the red cabbage finely.
- Wash and dry the lettuce leaves and fresh cilantro.
2- Crab Preparation:
- Chop or shred the imitation crab into bite-sized pieces.
3- Kani Salad Mixture:
- In a mixing bowl, combine the chopped imitation crab, Kewpie mayonnaise, Huy Fong Foods Sriracha, rice vinegar, lime juice, salt, and pepper.
- Mix until the crab is well coated and ingredients are evenly distributed.
4- Rice Paper Preparation:
- Fill a shallow bowl or plate with cold water.
- Dip a rice paper wrapper into the water for about 10–15 seconds, just until soft and pliable.
5- Assembly:
- Lay the softened rice paper flat on a clean cutting board.
- Place a couple of lettuce leaves in the center of the rice paper.
- Add layers of shredded red cabbage, julienned carrots, and cucumber.
- Add 2–3 spoonfuls of kani salad on top, followed by cilantro to taste.
6- Rolling the Spring Roll:
- Pull the bottom edge of the rice paper over the filling, fold in the sides, and then roll tightly from bottom to top.
7- Repeat:
- Repeat the soaking, filling, and rolling process for the remaining rice papers and filling.
8- Serve:
- Serve immediately on a platter, optionally cutting each roll in half to showcase the colorful interior.
