Ingredients

🍗 1 pound boneless, skinless chicken breast organic brand

🧂 1 teaspoon garlic powder your favorite spice brand

🍊 1 medium orange zest and juice

🍯 2 tablespoons Sugar Free Honey Wholesome Yum Brand

🥥 2 tablespoons Coconut Aminos Coconut Secret Brand

🌶️ 1/2 teaspoon red pepper flakes optional, any spice company

🥄 1 tablespoon avocado oil Primal Kitchen

🧄 2 cloves garlic minced

🌿 Fresh cilantro chopped for garnish

🧈 1 tablespoon butter grass-fed if possible

🧂 Salt and pepper

Instructions

1- Prepare the Chicken Marinade:

  • In a mixing bowl, add the juice and zest of one orange.

  • Incorporate the Sugar Free Honey, Coconut Aminos, garlic powder, and red pepper flakes.

  • Mix well, and then add the chicken, ensuring each piece is well-coated. Allow it to marinate for at least 30 minutes in the refrigerator.

2- Cook the Chicken:

  • Heat avocado oil in a non-stick frying pan over medium heat. Add minced garlic and sauté until fragrant.

  • Remove the chicken from the marinade and place it into the pan. Cook each side for about 4-5 minutes until fully cooked.

  • Remove chicken from the pan and let it rest.

3- Make the Orange Sauce:

  • In the same pan, add the marinade and bring it to a simmer.

  • Stir occasionally, letting it reduce to a thicker consistency, about 5 minutes. Add butter, and allow it to melt into the sauce for added creaminess.

4- Cauliflower Rice (optional):

  • You can serve this dish with cauliflower rice for an extra low-carb component. Simply pulse cauliflower florets in a food processor until they reach a rice-like texture. Sauté in a separate pan with a little oil until tender.

5- Assemble the Meal Prep:

  • Slice the chicken into bite-sized pieces and distribute them evenly into meal prep containers.

  • Drizzle the orange sauce over the chicken and garnish with fresh cilantro.

  • Include a side of cauliflower rice.
