Ingredients
Lemon Chicken & Vegetables:
๐ซ 2 1/2 Tbsp Olive Oil 50ml divided
๐ฅฆ 2 Large Heads of Broccoli florets & stems trimmed
๐ฟ 250g Green Beans top & tailed
๐ 1kg Chicken Thigh boneless & skinless diced
๐ 1/2 Cup Chicken Stock 125ml
๐ง 3 Garlic Cloves minced
๐ 2 Lemons juiced
๐ฏ 1/3 Cup Honey 80g
๐ง
1 tsp Onion Powder 2.5g
๐ฅข 1 1/2 Tbsp Soy Sauce 30ml
๐ฅ 2 tsp Sesame Oil 10ml
๐ฝ 1 1/2 Tbsp Corn Flour Cornstarch 12g
๐ง Sea Salt Flakes
๐ถ๏ธ Cracked Black Pepper
๐ง 80ml Water for steaming vegetables

Basmati Rice:
๐ 350g Basmati Rice washed
๐ง 700ml Cold Water
๐ง Salt
Instructions
1- Prepare Broccoli:
- Remove and trim broccoli florets, chopping stems into bite-sized pieces.
2- Prepare Green Beans:
- Wash and trim green beans. Chop as preferred.
3- Juice Lemons:
- Halve and juice lemons using a citrus juicer.
4- Dice Chicken:
- Cut chicken thighs into bite-sized pieces using KOI Knives on a dedicated cutting board.
5- Make Lemon Chicken Sauce:
- Combine chicken stock, minced garlic, lemon juice, honey, onion powder, soy sauce, sesame oil, and corn flour in a mixing bowl. Whisk until smooth, adjusting seasoning with salt and pepper.
6- Cook Basmati Rice:
- In a stainless steel saucepan over high heat, combine rice, cold water, and salt. Bring to a boil, then simmer covered on low for 14 minutes. Rest off heat for 4 minutes before fluffing.
7- Cook Vegetables:
- In a large pan, heat 30ml olive oil. Sautรฉ broccoli with a pinch of salt for 3-4 minutes. Add green beans and sautรฉ for 3 more minutes. Steam with water and cover for 2 minutes. Season with pepper.
8- Cook Lemon Chicken:
- In the same pan, add 20ml olive oil and cook chicken with salt for 10 minutes, stirring. Add lemon sauce, cook until thickened. Optionally, include sesame seeds.
9- Assemble Meal Prep:
- Divide rice, vegetables, and chicken into Luvele Meal Prep Containers. Garnish with sesame seeds.
10- Storage:
- Seal with lids and refrigerate for up to 4 days or freeze for 4 months. Use a Luvele vacuum pump for extended freshness.
