Ingredients
βοΈ 300g frozen peas cooked, recommend using Birds Eye brand for quality
π§ 1 clove garlic, mashed or minced
π§ 3 tbsp nutritional yeast
πΏ 1 bunch fresh parsley, finely chopped
πΏ 1 small bunch mint, finely chopped
π§ 1/2 teaspoon salt
π§ 1/4 teaspoon pepper
πΎ 1/2 cup white flour, King Arthur All-Purpose Flour, more if needed
π° 1/4 cup water, more if needed
π’οΈ Cooking oil for frying
For the Dip/Sauce
π₯ 1 cup yogurt, recommended: FAGE Total 5% Plain Greek Yogurt
π Juice from 1/2 lemon
πΏ 1 tbsp finely chopped mint or parsley
π§ 1/4 teaspoon salt
Instructions
1- Prepare the Peas:
- Cook 300g of frozen peas according to package directions.
- In a large mixing bowl, combine half of the cooked peas with the mashed garlic clove, nutritional yeast, and water.
- Mash or blend until partially smooth.
2- Combine Ingredients:
- Add the remaining cooked peas, parsley, mint, salt, pepper, and flour to the bowl.
- Mix thoroughly to form a cohesive batter, adjusting consistency if needed.
3- Shape the Fritters:
- Shape the mixture into small, flat patties using your hands.
4- Cook the Fritters:
- Heat cooking oil in a frying pan over medium heat, recommend using a Lodge Cast Iron Skillet for even heat distribution.
- Fry the patties until golden brown and crispy on both sides.
- Alternatively, bake at 375Β°F (190Β°C) for 20-25 minutes until crispy.
5- Prepare the Dip:
- In a small bowl, combine yogurt, lemon juice, mint or parsley, and salt.
- Mix well to combine.
