Introduction

Ingredients

🍝 200g High-protein pasta e.g., legume or durum wheat semolina fusilli
🫒 1-2 tablespoons Olive oil for sautéing
🧅 1/2 Medium white onion or 2 small shallots, diced small
🧄 3 cloves Garlic, minced
🍅 6 Sundried tomatoes in oil, chopped
🍅 1 tablespoon Tomato puree
🥫 1 tin Mutti tomato and basil
🍥 3 heaped tablespoons Silken tofu
🥄 1/2 tablespoon Miso paste
🍋 1 tablespoon Lemon juice
🍥 200g Firm tofu, crumbled
🌶️ 1 teaspoon Smoked paprika
🌶️ 1/4 teaspoon Cayenne pepper optional
🧂 Small pinch of Salt plus salt for pasta water
🌶️ Ground black pepper for seasoning
🥫 1-2 teaspoons Tamari
🌿 Small handful of Fresh basil leaves, torn


Instructions

1- Prepare the Sauce Base:

  • Heat the olive oil in a pan on low heat.
  • Add the diced onion and a small pinch of salt, sauté for 8 minutes until softened.
  • Incorporate the minced garlic and fry for another 1-2 minutes.
  • Stir in the chopped sundried tomatoes and ORO tomato puree, frying for 3 more minutes.
  • Add Mutti chopped tomatoes and a pinch of salt. Let it simmer on low heat.

2- Make the Tofu Crumb:

  • Crumble the firm tofu in a bowl.
  • Mix with smoked paprika, cayenne pepper if using, a pinch of salt, and black pepper.
  • Fry the seasoned tofu in a little olive oil, letting it sit for 10-15 seconds at a time to crisp up.
  • After about 5 minutes, add the tamari, stirring vigorously to avoid burning.
  • Once golden and dark, take it off the heat and mix in the fresh basil leaves.

3- Cook the Pasta and Finish the Sauce:

  • Cook the pasta in plenty of salty water. Reserve 2 mugs of pasta water before draining.
  • Take the sauce off the heat and transfer it to a blender.
  • Add silken tofu, 1 ladle of reserved pasta water, miso paste, and lemon juice.
  • Blend until smooth and creamy. Season to taste.

4- Combine and Serve:

  • Mix the creamy sauce with the cooked pasta in a pan. Add more pasta water as needed.
  • Serve topped with the golden tofu crumb, a drizzle of olive oil, and black pepper.
