Ingredients
๐ฅฉ 3 lb Chuck roast
๐ง 1/2 tbsp Salt
๐ถ๏ธ 1/2 tbsp Pepper
๐ฟ 1 tbsp Garlic powder
๐ง 1-2 tbsp Ghee
๐ฟ 2 Bay leaves
๐ฅฃ 1.5-2 cups Beef broth (Brand: Happy Belly)
๐ถ๏ธ 2-4 Chipotles in adobo sauce
๐ฅซ 1-2 tbsp Adobo sauce from the chipotles can
๐ง 2 tbsp Minced garlic
๐ 2 tbsp Apple cider vinegar
๐ Juice of a lime
๐ฟ 2 tbsp Cumin
๐ฟ 2 tbsp Mexican oregano
๐ฟ 1 tbsp Onion powder
Instructions
1- Prepare the Braising Liquid:
- In a mason jar, combine beef broth, chipotles in adobo sauce, adobo sauce, minced garlic, apple cider vinegar, lime juice, cumin, Mexican oregano, onion powder, garlic powder, salt, and pepper.
- Blend together using a Cuisinart immersion blender until smooth, then set aside.
2- Prepare the Chuck Roast:
- Pat the chuck roast dry with paper towels.
- Season thoroughly on all sides with salt, pepper, and garlic powder.
3- Sear the Chuck Roast:
- Heat ghee in a large cast iron skillet over medium-high heat.
- Sear the chuck roast for 3-4 minutes per side, creating a brown crust.
4- Set Up Slow Cooker:
- Pour a layer of the prepared braising liquid into the bottom of a Crock-Pot slow cooker.
5- Add Roast and Remaining Liquid:
- Place the seared chuck roast into the slow cooker.
- Pour the remaining braising liquid over the roast and add bay leaves.
6- Cook:
- Cover the slow cooker and cook on high for 4-6 hours, or until the beef is fork-tender and easily falls apart.
7- Shred:
- Carefully remove the cooked beef from the slow cooker and let it cool for a few minutes.
- Shred the beef using two forks.
8- Serve:
- Spoon some of the cooking broth over the shredded beef.
- Serve with rice, lettuce, pico de gallo, avocado, and green onions for a complete meal.
