Ingredients
π 200g Fusilli Pasta
π₯¬ 300g Cavolo Nero
π§ 3 Garlic Cloves
π§ 160g Cottage Cheese
π₯ 40g Light Cream Cheese
π§ 40g Parmesan, for sauce, 10g extra, to serve
π 150g Cooked Shredded Chicken
π 1 Lemon, fresh fruit
πΆοΈ A pinch of Dried Chilli Flakes
π« A drizzle of Olive Oil, optional
π§ Salt
π§ Pepper, a pinch
Instructions
1- Prepare Ingredients:
- Bring a large saucepan of salted water to a boil.
- Strip the cavolo nero leaves from their stems and rinse thoroughly. Peel the garlic cloves.
2- Blanch Vegetables:
- Add cavolo nero and garlic into the boiling water. Boil for 2 minutes until tender.
- Drain and immediately cool in iced water to preserve the vibrant green color.
3- Make the Sauce:
- Zest the lemon and squeeze its juice.
- Grate the Parmesan cheese.
- Squeeze out excess water from the cooled cavolo nero.
- In the Beast Health Blender, combine cavolo nero, garlic, cottage cheese, cream cheese, 40g of grated Parmesan, a pinch of salt, a pinch of pepper, and a couple of tablespoons of blanching water. Blitz until smooth, adding more water if necessary.
4- Cook Pasta:
- Bring the same saucepan of water back to a boil, add fusilli pasta, and cook according to package instructions until al dente.
5- Combine:
- Drain the cooked pasta and transfer it to a large bowl.
- Pour the supergreen sauce over the pasta and toss to coat evenly.
- Add shredded chicken and toss again to warm through.
6- Final Touches:
- If the sauce feels too loose, continuing to toss will help it thicken.
- Squeeze lemon juice over the pasta. Adjust seasoning with salt and pepper as needed.
7- Serve:
- Serve with the extra 10g of grated Parmesan.
- Drizzle with a bit of olive oil if desired.
- Garnish with a pinch of dried chilli flakes.
