Indulge in these decadent sweet potato brownies, a perfect treat for lifting your spirits during the luteal phase. Packed with nutrient-dense ingredients, these brownies are topped with a luscious chocolate ganache. They not only taste amazing but also provide an aesthetically pleasing and vibrant touch to your day.

Ingredients

šŸ  1 medium cooked and peeled sweet potato

🄚 3 eggs

šŸÆ 3/4 cup honey

🌾 6 tbsp all-purpose flour

šŸ« 3 tbsp cacao powder

šŸ„„ 1 tsp baking powder

šŸ„„ 1 tsp baking soda

šŸ¦ 1 tsp vanilla extract

šŸ§‚ Pinch of sea salt

šŸ„› 1/2 cup heavy cream

šŸ« 3/4 cup dark chocolate chunks or chips

Instructions

1- Prepare the Sweet Potato:

  • Cook the sweet potato using your preferred method (boil, steam, or microwave) until it becomes soft.

  • Once cooked, peel the skin and transfer the flesh to a large metal mixing bowl.

2- Make the Batter:

  • Mash the sweet potato until smooth using a potato masher.

  • Add the eggs one by one, mixing until incorporated.

  • Stir in honey, cacao powder, flour, baking powder, baking soda, vanilla extract, and a pinch of sea salt.

  • Whisk all the ingredients together until you achieve a smooth, thick brownie batter.

3- Prepare for Baking:

  • Preheat your oven to 350°F (175°C) using a GE electric stovetop and oven.

  • Line a baking sheet with parchment paper.

4- Bake the Brownies:

  • Pour the brownie batter onto the prepared baking sheet, spreading it evenly using a spatula.

  • Bake the brownies for approximately 35-40 minutes. They should look slightly undercooked when you remove them, as they will firm up as they cool.

5- Make the Chocolate Ganache:

  • Heat the heavy cream just below its boiling point, using a saucepan.

  • Pour over the dark chocolate chunks or chips in a mixing bowl, stirring until smooth. Allow it to cool for a few minutes to thicken.

6- Frost and Decorate:

  • Once the brownies have cooled completely, spread the chocolate ganache evenly over the top using a spatula.

  • Optionally, sprinkle some colorful chocolate candies on top for decoration.

7- Serve:

  • Cut the ganache-topped brownies into individual squares.

  • Serve on a white plate for an optimal presentation.
