Ingredients
🍠 1 medium cooked and peeled sweet potato
🥚 3 eggs
🍯 3/4 cup honey
🌾 6 tbsp all-purpose flour
🍫 3 tbsp cacao powder
🥄 1 tsp baking powder
🥄 1 tsp baking soda
🍦 1 tsp vanilla extract
🧂 Pinch of sea salt
🥛 1/2 cup heavy cream
🍫 3/4 cup dark chocolate chunks or chips
Instructions
1- Prepare the Sweet Potato:
Cook the sweet potato using your preferred method (boil, steam, or microwave) until it becomes soft.
Once cooked, peel the skin and transfer the flesh to a large metal mixing bowl.
2- Make the Batter:
Mash the sweet potato until smooth using a potato masher.
Add the eggs one by one, mixing until incorporated.
Stir in honey, cacao powder, flour, baking powder, baking soda, vanilla extract, and a pinch of sea salt.
Whisk all the ingredients together until you achieve a smooth, thick brownie batter.
3- Prepare for Baking:
4- Bake the Brownies:
Pour the brownie batter onto the prepared baking sheet, spreading it evenly using a spatula.
Bake the brownies for approximately 35-40 minutes. They should look slightly undercooked when you remove them, as they will firm up as they cool.
5- Make the Chocolate Ganache:
Heat the heavy cream just below its boiling point, using a saucepan.
Pour over the dark chocolate chunks or chips in a mixing bowl, stirring until smooth. Allow it to cool for a few minutes to thicken.
6- Frost and Decorate:
Once the brownies have cooled completely, spread the chocolate ganache evenly over the top using a spatula.
Optionally, sprinkle some colorful chocolate candies on top for decoration.
