Ingredients
🥢 100g dry Soba Noodles
🥦 1 cup shelled Edamame
🧊 1 block 400-450g extra firm Tofu
🥄 1 tablespoon Chinese Sesame Paste Wangzhihe brand
🥄 1 tablespoon Miso Paste
🥄 1 tablespoon Soy Sauce or Tamari
🍯 1 tablespoon Sweetener, maple syrup or mirin
🌿 8 spears Asparagus
🥕 1 medium Carrot, julienned
🥑 Avocado Oil, for coating and sautéing
🧂 Salt
🌰 Sesame Seeds, for garnish
🔵 Cold Water & Ice for rinsing noodles
Instructions
1- Prepare the Tofu:
- Slice the block of tofu into rectangular pieces.
- Coat the tofu slices with avocado oil and sprinkle with salt on both sides.
2- Cook the Tofu:
- Place the tofu pieces in the Ninja Foodi Smart XL Grill model FG551 and air fry them until golden brown and crispy.
- Alternatively, you can pan-fry the tofu until crisp.
3- Prepare the Miso Sesame Sauce:
- In a metal mixing bowl, combine miso paste, Chinese sesame paste, soy sauce or tamari, and a liquid sweetener like maple syrup or mirin.
- Use a small wire whisk to mix until the sauce is smooth and well combined.
4- Cook the Vegetables:
- Julienne the carrot. Trim the woody ends off the asparagus spears.
- Using a wooden spatula, sauté the julienned carrots in a preheated electric hot pot or griddle until slightly softened.
- Add the asparagus and continue to cook until tender-crisp.
5- Cook the Soba Noodles:
- Boil soba noodles according to package instructions in the electric hot pot or griddle until al dente.
- Drain using a colander or strainer and rinse thoroughly with cold water, adding ice to cool them down and prevent sticking.
6- Assemble the Dish:
- On a ceramic serving plate or bowl, spoon a base layer of the miso sesame sauce.
- Arrange the cold soba noodles over the sauce.
- Neatly add the cooked tofu, shelled edamame, sautéed carrots, and asparagus on the plate.
7- Garnish and Serve:
- Drizzle additional miso sesame sauce over the assembled ingredients.
- Garnish with a sprinkle of sesame seeds.
