500g Cherry Tomatoes

1 Onion
๐ง 6 Garlic Cloves
๐ถ๏ธ 2 Red Chillies
๐ฟ 1 Handful of Coriander
๐ 1 Tbsp Lime Juice
๐ง 1 tsp Salt
๐ฅ 300g 0% Greek Yoghurt
๐ถ๏ธ 3 Jalapeรฑos
๐ฅ 1 Avocado
๐ 1 Tbsp Lime Juice

Chopped Onion & Coriander for garnish
๐ง 10g Grated Mozzarella per tortilla
๐ฎ Tortillas for 8 quesadillas
Instructions
1- Marinate the Chicken:
- Dice the chicken thigh fillets and thinly slice the onions.
- In a large mixing bowl, combine the chicken, onions, olive oil, salt, paprika, garlic powder, onion powder, chipotle paste, oregano, and cumin. Mix well to ensure even coating.
2- Roast the Chicken:
- Preheat your oven to 200ยฐC.
- Spread the chicken mixture on a metal oven tray and roast for 20 minutes or until the chicken is cooked through and slightly charred.
3- Prepare the Burnt Salsa:
- Halve the red chillies and cut the onion into chunks. Peel the garlic cloves.
- Place the cherry tomatoes, chillies, onion, and garlic on a clean oven tray. Grill until they are charred.
- Transfer these to a Nutribullet-style blender and add coriander. Blend until smooth. Season with lime juice and salt.
4- Prepare the Green Salsa (Avocado Crema):
- In the blender, combine Greek yoghurt, jalapeรฑos, and avocado. Blend until smooth and creamy.
- Season with lime juice and salt.
5- Assemble the Quesadillas:
- On each tortilla, sprinkle 10g of mozzarella on one half, then top with a portion of chipotle chicken. Fold each tortilla in half.
- Heat a non-stick pan, such as the Our Place Always Pan, over medium heat. Cook the quesadilla until crispy and golden brown on each side, ensuring the cheese is melted.
6- Serve:
- Open the quesadilla slightly, add some green salsa and garnish with chopped onion and coriander. Serve with burnt salsa for dipping.
