Instructions
1- Prepare the Mango Salsa:
- Dice 1/4 red onion, 1 jalapeΓ±o, 1 mango, and 1/2 tomato. A kitchen chopper can speed up this process.
- Transfer the diced ingredients into a clear mixing bowl.
- Squeeze the juice of 1 lime over the salsa.
- Add a pinch of Kona Sea Salt and black pepper to taste.
- Mix thoroughly with a spoon, then set aside to let the flavors marry.
2- Prepare the Honey Sriracha Crema:
- In an orange mixing bowl, combine 3 tablespoons of Best Foods Plant-Based Mayo, 3-4 tablespoons of honey sriracha sauce, and 1/2 teaspoon of black pepper.
- Stir until the mixture is smooth and creamy.
3- Prepare the Honey-Jerk Salmon Bites:
- Cut 1-2 salmon fillets into bite-sized pieces.
- Drizzle 1 teaspoon of Chosen Foods olive oil over the salmon, then add 2 tablespoons of Walkerswood jerk sauce and 1/2 teaspoon of smoked paprika.
- With gloved hands, gently massage the seasoning and oil into the salmon pieces for even coverage.
- Heat a HexClad skillet over medium heat. Sear salmon bites for approximately 3 minutes per side until golden brown and cooked through.

4- Assemble the Power Bowl:
- Lay a generous amount of spring mix salad in a wide, white serving bowl.
- Neatly arrange the prepared mango salsa on one side of the greens.
