š¶ļø 1 tsp 4g Smoked Paprika brand: McCormick
š¶ļø 1/4 tsp 1g Chilli Powder brand: McCormick
š§ Salt & Pepper precise quantity
š„£ 2/3 Cup 180g Low Fat Mayonnaise brand: Hellmann's or any preferred
š¶ļø 1/2 Cup 125ml Sweet Chilli Sauce brand: Mae Ploy or any preferred
š 1/4 Cup 60g Sriracha Mayonnaise brand: Huy Fong Foods
š 1 Lime Zest & Juiced
š„ 1 Lebanese Cucumber
š„ 1 Carrot Peeled
š¶ 1/2 Cup 125ml White Vinegar brand: Heinz
š§ 1/4 Cup 60ml Water

š 300g 10.5oz Jasmine Rice Washed brand: Royal
š§ 500g 500ml Cold Water

Instructions
1- Prepare Skewers:
- Soak wooden skewers in water for 20 minutes to prevent burning during cooking.
2- Pickle Vegetables:
- In a saucepan, combine vinegar, water, and sugar.
- Bring to a boil, then remove from heat.
- Place carrot and cucumber slices in a jar and pour the pickling liquid over them.
- Cover with a lid and refrigerate until cold.
3- Cook Jasmine Rice:
- Place a saucepan over high heat, add jasmine rice, 500ml of water, and a pinch of salt (aromatics are optional).
- Stir to avoid clumping.
- Bring to a boil, cover, reduce heat to low, and cook for 12 minutes.
- Turn off heat, leave the lid on for 4 minutes, and fluff with a fork.
- Set aside.
4- Prepare Bang Bang Sauce:
- In a bowl, mix mayonnaise, sweet chili sauce, sriracha mayonnaise, lime zest, and juice.
- Divide into two bowls, setting one aside for serving.
5- Marinate Chicken:
- In another bowl, combine diced chicken, olive oil, onion powder, garlic powder, smoked paprika, chili powder, salt, and pepper.
- Thread the chicken onto soaked skewers and brush with half of the bang bang sauce set aside for cooking.
6- Air Fry Chicken:
- Preheat the air fryer to 200°C (390°F).
- Place skewered chicken in the air fryer and cook for 8 minutes.
- Remove, brush with more bang bang sauce, and cook for another 6-8 minutes or until fully cooked.
7- Assemble Meal Prep:
- Divide all elements into 5x 750ml containers.
- Start with a base of jasmine rice, followed by the bang bang chicken (removed from skewers), pickled carrot, cucumber, and avocado.
- Garnish with sesame seeds, coriander, lime wedges, and a drizzle of the reserved bang bang sauce.
8- Storage:
- Store in the fridge for 3-4 days or in the freezer for up to 3 months.
- Thaw overnight in the fridge before reheating.
