Ingredients

🫒 2 tablespoons La Española olive oil
🧄 2 cloves garlic, crushed
🍗 2 chicken breasts
🧅 1 medium onion, finely diced approx. 1 cup
🧄 1-2 tablespoons minced garlic
🍲 1 to 1.5 cups chicken stock
🍋 Juice from 1/2 fresh lemon
🌿 1-2 tablespoons dried herbs e.g. Italian seasoning blend
🥛 1 cup heavy cream

Instructions

1- Infuse Oil:

Heat 2 tablespoons of La Española olive oil in a stainless steel frying pan over high heat.
Add the crushed garlic cloves and cook for 2-3 minutes to infuse the oil.
Remove and discard the garlic.

2- Sear Chicken:

Place the chicken breasts into the garlic-infused oil.
Sear for 3-4 minutes on each side until golden brown.
Remove and set aside on a plate.

3- Sauté Onions:

Reduce the heat to medium-low and add the diced onion.
Sauté until soft and translucent, about 3-5 minutes.

4- Prepare Sauce:

Stir in the minced garlic.
Pour in the chicken stock, using a wooden spatula to deglaze the pan by scraping up the browned bits.
Squeeze in the fresh lemon juice and sprinkle with dried herbs.
Add the heavy cream, stirring continuously until the sauce thickens and becomes creamy.

5- Finish Dish:

Return the chicken breasts to the pan.
Coat them with the sauce.
Simmer for 2-3 minutes until heated through.
