Start your day with these delicious and satisfying High-Protein Breakfast Hot Pockets. Packed with crispy bacon, fluffy eggs, and creamy cheese encased in a homemade dough, they're perfect for meal prepping. Each pocket delivers a punch of protein to kickstart your morning!
Ingredients
š„ 120g diced short-cut bacon (or turkey/beef bacon)
š„ 6 eggs
š„ 150g egg whites
š§ Salt and pepper for seasoning
š¾ 400g plain flour
š„ 2 teaspoons baking powder
š„ 420g low-fat yogurt
š§ Onion powder (to taste)
š§ Garlic powder (to taste)
š§ 20g low-fat cheese
šæ Chives (for garnish)
Instructions
1- Cook Bacon:
- Cook the diced bacon in a pan over medium heat until crispy.
- Remove from the pan and set aside.
2- Prepare Eggs:
- In the same pan, cook the eggs and egg whites on low to medium heat.
- Gently stir every minute until the eggs are cooked and fluffy.
- Season with salt and pepper, and set aside.
3- Mix Dough Ingredients:
- In a large bowl, combine the plain flour, baking powder, yogurt, onion powder, garlic powder, and a pinch of salt.
- Mix until the mixture becomes crumbly.
4- Knead Dough:
- Lightly flour your hands, then knead the dough until it forms a smooth ball.
5- Divide Dough:
- Divide the dough into 8 equal pieces and roll each into a ball.
6- Flatten Dough Balls:
- Flatten each dough ball as thinly as possible.
7- Add Fillings:
- Add a small portion of low-fat cheese to each flattened ball.
- Follow by a spoonful of bacon and eggs, and a sprinkle of chives.
8- Seal Pockets:
- Pinch the edges of the dough to enclose the filling and form a sealed pocket.
