š 1 serving Rice Vermicelli Noodles, approx. 50-70g
š§ 1.5 - 2 cups Boiling Water
Instructions
1- Preparation of Ingredients:
- Mince the garlic and chop the spring onions, cilantro, bok choy, and red chili.
- Cube the firm tofu into bite-sized pieces.
2- Sauce Preparation:
- In a ceramic mixing bowl, mix the peanut butter, red curry paste, lemongrass paste (or powder), soy sauce (or tamari), and curry powder until it forms a smooth paste.
3- Assembling the Instant Noodle Jar:
- Begin with a clean Weck glass jar.
- Place the sauce mixture at the bottom.
- Follow with a layer of bok choy.
- Add the dry rice vermicelli noodles.
- Top with cubes of tofu.
- Sprinkle minced garlic, chopped spring onions, and sliced red chili on top.
- Finish with a layer of cilantro.
4- Meal Prep and Cooking:
- Seal the jar and refrigerate until use.
- To serve, pour boiling water over the ingredients, ensuring they are submerged.
