Ingredients
Creamy Sauce:
๐ฅข 300g Soft tofu
๐ง 1 tsp Minced garlic
๐ง 1/4 tsp Salt
๐ฅ 1 tbsp Tahini
๐พ 1 tsp Sesame oil
๐ 1 tsp Lemon juice
๐ฅ A splash of Soy milk
Spicy Meat Topping:
๐ 200g Ground chicken
๐ง 1 tsp Minced garlic
๐ฟ 1 tsp Minced ginger
๐ฑ 1 tbsp Chopped green onion
๐ถ๏ธ 1 tsp Doubanjiang
๐ถ๏ธ 1 tbsp Gochujang
๐ฅข 1 tbsp Soy sauce
๐ฅ 50 ml Chicken stock
๐ฌ 1 tsp Sugar
๐ถ๏ธ 1 tbsp Chili oil
๐ง 1/4 tsp Sichuan pepper
๐ข๏ธ 1-2 tbsp Cooking oil
Noodles:
๐ 400-500g Udon noodles
Garnish:
๐ฑ Chopped green onions
๐ฅ Sesame seeds
๐ถ๏ธ Chili oil
Instructions
1- Prepare the Creamy Sauce:
- In a blender, combine 300g of soft tofu, 1 tsp minced garlic, 1/4 tsp salt, 1 tbsp tahini, 1 tsp sesame oil, 1 tsp lemon juice, and an optional splash of soy milk. Blend until the mixture is smooth and creamy.
2- Cook the Aromatics:
- Heat 1-2 tbsp of cooking oil in a black non-stick frying pan over medium heat. Sautรฉ 1 tsp minced garlic and 1 tsp minced ginger, followed by 1 tbsp chopped green onions, until fragrant.
3- Add the Chicken:
- Place 200g of ground chicken in the pan and cook until it changes color.
4- Season the Chicken:
- To the chicken, add 1 tsp of doubanjiang, 1 tbsp of gochujang, 1 tbsp of soy sauce, and 50 ml of chicken stock. Stir well and let simmer for a minute.
5- Enhance the Flavor:
- Stir in 1 tsp sugar, 1 tbsp chili oil, and adjust with 1/4 tsp Sichuan pepper to taste.
6- Cook the Noodles:
- In a separate pot, boil udon noodles according to the package instructions until they are tender.
7- Assemble the Dish:
- Transfer the cooked noodles to serving bowls. Pour the creamy tofu sauce over the noodles, then top with the spicy chicken mixture.
8- Garnish and Serve:
- Garnish with additional green onions, sesame seeds, and chili oil as desired. Serve immediately.
