Instructions

1- Prepare the Creamy Sauce:

  • In a blender, combine 300g of soft tofu, 1 tsp minced garlic, 1/4 tsp salt, 1 tbsp tahini, 1 tsp sesame oil, 1 tsp lemon juice, and an optional splash of soy milk. Blend until the mixture is smooth and creamy.

2- Cook the Aromatics:

  • Heat 1-2 tbsp of cooking oil in a black non-stick frying pan over medium heat. SautΓ© 1 tsp minced garlic and 1 tsp minced ginger, followed by 1 tbsp chopped green onions, until fragrant.

3- Add the Chicken:

  • Place 200g of ground chicken in the pan and cook until it changes color.

4- Season the Chicken:

  • To the chicken, add 1 tsp of doubanjiang, 1 tbsp of gochujang, 1 tbsp of soy sauce, and 50 ml of chicken stock. Stir well and let simmer for a minute.

5- Enhance the Flavor:

  • Stir in 1 tsp sugar, 1 tbsp chili oil, and adjust with 1/4 tsp Sichuan pepper to taste.

6- Cook the Noodles:

  • In a separate pot, boil udon noodles according to the package instructions until they are tender.

7- Assemble the Dish:

  • Transfer the cooked noodles to serving bowls. Pour the creamy tofu sauce over the noodles, then top with the spicy chicken mixture.
