Introduction
Indulge in this deliciously creamy Silken Tofu and Sundried Tomato Pasta, a high-protein, plant-based twist on a classic Italian favorite. Packed with rich flavors and textures, this quick and nourishing dish will satisfy both your taste buds and nutritional needs.
Ingredients
๐ 200g High-protein pasta e.g., legume or durum wheat semolina fusilli
๐ซ 1-2 tablespoons Olive oil for sautรฉing
๐ง
1/2 Medium white onion or 2 small shallots, diced small
๐ง 3 cloves Garlic, minced
๐
6 Sundried tomatoes in oil, chopped
๐
1 tablespoon Tomato puree
๐ฅซ 1 tin Mutti tomato and basil
๐ฅ 3 heaped tablespoons Silken tofu
๐ฅ 1/2 tablespoon Miso paste
๐ 1 tablespoon Lemon juice
๐ฅ 200g Firm tofu, crumbled
๐ถ๏ธ 1 teaspoon Smoked paprika
๐ถ๏ธ 1/4 teaspoon Cayenne pepper optional
๐ง Small pinch of Salt plus salt for pasta water
๐ถ๏ธ Ground black pepper for seasoning
๐ฅซ 1-2 teaspoons Tamari
๐ฟ Small handful of Fresh basil leaves, torn
Instructions
1- Prepare the Sauce Base:
- Heat the olive oil in a pan on low heat.
- Add the diced onion and a small pinch of salt, sautรฉ for 8 minutes until softened.
- Incorporate the minced garlic and fry for another 1-2 minutes.
- Stir in the chopped sundried tomatoes and ORO tomato puree, frying for 3 more minutes.
- Add Mutti chopped tomatoes and a pinch of salt. Let it simmer on low heat.
2- Make the Tofu Crumb:
- Crumble the firm tofu in a bowl.
- Mix with smoked paprika, cayenne pepper if using, a pinch of salt, and black pepper.
- Fry the seasoned tofu in a little olive oil, letting it sit for 10-15 seconds at a time to crisp up.
- After about 5 minutes, add the tamari, stirring vigorously to avoid burning.
- Once golden and dark, take it off the heat and mix in the fresh basil leaves.
3- Cook the Pasta and Finish the Sauce:
- Cook the pasta in plenty of salty water. Reserve 2 mugs of pasta water before draining.
- Take the sauce off the heat and transfer it to a blender.
- Add silken tofu, 1 ladle of reserved pasta water, miso paste, and lemon juice.
- Blend until smooth and creamy. Season to taste.
4- Combine and Serve:
- Mix the creamy sauce with the cooked pasta in a pan. Add more pasta water as needed.
- Serve topped with the golden tofu crumb, a drizzle of olive oil, and black pepper.
