🍅 60g Tomato Paste
🧂 1/2 Tsp Salt
🌶️ 1/2 Tsp Pepper
🌶️ 1 Tsp Paprika
🌰 1 Tsp Cumin
🍝 260g Uncooked Pasta of choice, e.g., shell pasta or fusilli
🥣 400g Skyr Fat-Free Yogurt
🧄 1.5 Tsp Minced Garlic
🌿 1 Tsp Dried Mint
🧂 Pinch of Salt
🍋 Juice of 1/2 Lemon
🧈 40g Light Butter, generic
🌶️ 1/2 Tsp Paprika
🧂 Pinch of Salt
🌶️ 1/2 Tsp Chilli Flakes
🍅 15g Tomato Paste
💧 Reserved Pasta Water, for extra volume
🍅 Cherry Tomatoes, chopped
🌿 Fresh Mint Leaves, chopped
🌶️ Chilli Garlic seasoning, optional
Instructions
1- Garlic Mint Sauce:
- In a mixing bowl, combine Skyr yogurt, minced garlic, dried mint, a pinch of salt, and lemon juice.
- Whisk until smooth and transfer to a storage container. Refrigerate to keep fresh.
2- Juicy Ground Beef:
- Heat a non-stick frying pan over medium heat and spray with avocado oil.
- Sauté the chopped onions for 8-10 minutes until golden and soft.
- Add salt, black pepper, paprika, cumin, minced garlic, and tomato paste. Cook for 3-4 minutes until fragrant.
- Add the ground beef, increase heat to high, and cook for about 8 minutes until browned.
- Season with extra salt, pepper, paprika, cumin, and additional tomato paste, if needed. Mix well.
3- Pasta:
- Cook pasta according to package instructions. Reserve some pasta water before draining.
4- Chilli Butter Sauce:
- Melt butter in a separate pan.
- Add paprika, a pinch of salt, chilli flakes, tomato paste, and pasta water. Stir and simmer until aromatic.
5- Assembly:
- Portion pasta into meal prep containers.
- Layer garlic mint sauce over the pasta.
- Top with seasoned beef.
- Drizzle with chili butter sauce.
- Garnish with cherry tomatoes, mint leaves, and optionally, chilli garlic seasoning.
