Ingredients
🥔 900g Coles Carisma Potatoes or any alternative
🫒 1 Tsp Olive Oil
🧂 2 Tsp Salt split between potatoes and beef
🧄 2 Tsp Garlic Powder split between potatoes and beef
🧅 4 Tsp Onion Powder split between potatoes and beef
🌿 1 Tsp Parsley Flakes for potatoes
🌶️ 3 Tsp Smoked Paprika split between potatoes, sauce, and beef
🥩 900g Woolworths Heart Smart Extra Lean Diced Beef or any lean cut beef
🧄 6 Diced Garlic Cloves
🧈 20g Nuttelex Light Butter
🥛 300ml Carnation Light & Creamy Fat Free Evaporated Milk
🧀 20g Freshly Grated Parmesan Cheese
🌿 1 Tsp Oregano
🥣 150ml Campbell's Beef Stock
🧀 75g Light Cream Cheese or alternative: light laughing cow wedges
🐔 2 Tsp Vegeta Chicken Stock Powder Low Sodium
🧂 1 Tsp Black Pepper for beef
Instructions
1- Prepare Potatoes:
- In a large mixing bowl, combine 900g diced Coles Carisma Potatoes with 1 Tsp olive oil, 1 Tsp salt, 1 Tsp garlic powder, 2 Tsp onion powder, 1 Tsp parsley flakes, and 2 Tsp smoked paprika.
- Mix until potatoes are evenly coated.
2- Cook Potatoes:
- Transfer the seasoned potatoes into an air fryer basket or onto a baking tray.
- Air fry at 200°C (400°F) for 20-25 minutes or bake in the oven for 25-30 minutes.
- Flip the potatoes halfway through for even cooking.
3- Prepare Beef:
- In a separate bowl, season 900g extra lean diced beef with 1 Tsp salt, 1 Tsp garlic powder, 2 Tsp onion powder, and 1 Tsp black pepper.
- Mix to evenly coat the beef.
4- Prepare Blended Sauce Base:
- Blend 300ml of Carnation fat-free evaporated milk with 20g freshly grated Parmesan cheese and 1 Tsp oregano in a personal blender cup until smooth.
- Set aside.
5- Cook Steak Bites:
- Using a large frying pan on high heat, apply a light cooking oil spray.
- Add the seasoned beef and cook until steak bites are crispy and browned on all sides.
6- Add Butter and Garlic:
- Reduce the heat to low.
- Incorporate 20g Nuttelex light butter and 6 diced garlic cloves into the pan.
- Stir until butter is melted and garlic is fragrant.
7- Remove Steak:
- Take the steak bites out of the pan and set them aside.
8- Create Creamy Sauce:
- To the same pan with remaining drippings, add 150ml Campbell's beef stock and the blended sauce mixture.
9- Season and Simmer Sauce:
- Stir in 75g light cream cheese, 1 Tsp smoked paprika, and 2 Tsp Vegeta chicken stock powder.
- Simmer the sauce for 5 minutes until thick and creamy.
10- Combine Dish:
- Return the steak bites to the pan along with the cooked potatoes.
- Coat generously with the creamy garlic sauce.
11- Serve or Meal Prep:
- Divide the dish into 4 equal servings using meal prep containers, garnish with fresh parsley if desired.
